Marie's Irish Whiskey Ring Cake
oz / 175g Margarine (at room temperature)
6oz / 175g Caster Sugar
6oz /175g Plain Flour
½ Level Teaspoon Baking Powder
3 Eggs (size 3)
4oz / 125g Sultanas
Rind 1 Orange (and little juice)
1 - 2 Tablespoons Irish Whiskey
8oz / 225g Icing Sugar , Sieved
Finely Grated Rind, & Juice 1 Lrg. Orange
to Gas Mark 4 / Elec. 350 F or 180 C.
Flour and Baking Powder together in mixing bowl and add all
other ingredients. Beat together until smooth for 2 to 3 minutes.
the mixture into a greased and floured Ring Tin (8 inch /20cm)
or use a non=stick tin. Smooth the top.
in Middle shelf of Pre-heated Oven for 1-hour approx, until
well risen, golden and firm to touch.
for 10-15 mins in the Tin, then turn out and cool on wire tray
make icing: Mix Icing Sugar, Orange Rind and Juice together
with a little Warm Water, if necessary.
over the Cake and decorate, as you like.
in centre Optional - we used Green Cherries for St. Patrick's,
can use Red Cherries for Christmas.
Ideal for afternoon Tea/ Coffee. Serve with Baileys, Cream
or Ice Cream.
