Chicken with Tarragon in White Wine
Serves 6

Ingredients:

4 Chicken Breast - cut into bite size pieces
1 pkt Fresh Tarragon
1 Courgette - sliced
4 Cloves Garlic - finely chopped
2 Onions - sliced finely
6 Streaky Bacon - cooked and cut into pieces (optional)
Olive Oil
Salt and Black Pepper to taste
½ Cup Chicken Oxo or stock
½ cup Cream (optional)
Glass of White Wine
Grated Parmesan Cheese or Cheddar Cheese

Method:

Over night marinate the chicken in tarragon and olive oil. Leaving some tarragon to garnish.

Heat the oil in wok or deep pan, add the garlic and stir for I minute, add the marinate chicken and stir until almost cooked, add onions and cooked for one to two minutes and add sliced courgette and stir. Pour glass of white wine and chicken stock. After 5 minutes turn down heat and simmer for two to three minutes. Add grated Parmesan and cream (optional). Remove from heat.

Serve with pasta and garnish with a sprig Tarragon.
