Gazpacho (Spanish Chilled Soup)

Ingredients:

8 Fl oz Vegetable juice
1 Tin Tomatoes (Waitrose Cherry Tomatoes are good)
1 small red onion
1 small red pepper
1 half green pepper
1 clove garlic - crushed
2oz wedge of cucumber
Dash Balsamic Vinegar
Dash Olive Oil
Dash Worcester sauce
1 small red chilly (de-seeded & roughly chopped)
Chopped basil
Salt & pepper

Method:

Place tomatoes & vegetable juice in liquidizer. Roughly chop the onion, peppers & cucumber. De-seed & roughly chop the chilly. Add chopped vegetables to the tomatoes & vegetable juice and process to a puree. Add the remaining ingredients and process again. Season with Salt & Pepper

Serve chilled with Basil sprig to garnish.

You can also garnish with any or all of the following: croutons, sprig of celery leaves finely chopped onion, peppers and chives.
