Liver Pate with Cranberries, Apple & Brandy
1 Onion, chopped
1 Clove of Garlic, crushed
250g Chicken Livers, trimmed
2 Tablespoons Frozen Cranberries
1 Half of Apple
Sugar to taste
2 Shot Glasses of Brandy
1 Tablespoon Cream
Freshly ground pepper to taste
Sprig of Parsley
Cranberries and finely chopped Apple in a saucepan, cover with
water and cook. Add sugar to taste and set aside. Melt butter
in pan. Cook onion & garlic until onion is tender. Add Livers
& cook for 5-10 minutes.
the mixture into blender with all the remaining ingredients
Process until smooth. Pour into serving bowl. Chill to set. Once
chilled, garnish with Cranberries and sprig of Parsley.
with Toast, Crackers or Melba Toasts.
