Sweet Chilli Snapper


1 Medium sized Red Snapper
3 tablespoons sweet chilli sauce
2 red chilli's (you can choose how hot you want your chilli's to be I used mild ones)
Small handful fresh coriander
Small handful fresh chives
Pinch of rock salt
2 lemons
2 limes
2 small dabs of butter


Place the fish in tinfoil and season with the rock salt then place in an oven proof dish, squeeze a generous amount of lemon juice and Lime Juice over the top.

Slice the chillis in half and scrape the seeds out of the centre and dice into small pieces. Sprinkle the chilli over the fish. Chop the fresh herbs and sprinkle them over the fish. Next take your sweet chilli sauce and pour over and around the fish. Bake in the oven until cooked. This should take about 20 / 35 minutes depending on the size of the fillets. This is quick, fresh, zingy and flavoursome.

Serve with roasted Parmesan potatoes, and a fresh green salad.

Everything in this meal was bought in the local Pulau Tikus wet market in Penang, For those of us from Western cities where we get all our foodstuffs from the supermarket, it is an awesome thing to be able to go to the market in the morning, get all the fresh ingredients, take them home and then create a tasty meal from it all that evening.
