Pork Rolls

Ingedients:

250gms Pork Loin - sliced teppenyaki style. (available in supermarkets)
150gms goat cheese
100gms Semi dried Tomato's
Half of 1 leek
Small handful chives
2 Portobello mushrooms
Half a Red Pepper
Olive Oil to saute and fry

Method:

Slice the leeks into small circles and sauté until soft and tender. Chop the semi dried tomatos, chives and Portobello mushrooms into small pieces and dice the red pepper into small peices. Put the goat's cheese and the rest of the ingredients into a mixing bowl and combine. Lay out a piece of pork, then take a spoonful of the mixture and make it into a sausage shape place in the centre of the pork. Next fold in the ends and then roll the pork like a cigar until sealed.
Take a non stick pan and drizzle a little olive oil in the pan and fry the pork rolls until the skin goes brown and golden.
