Cheese Filo Tarts
packet filo pastry
250gms ricotta cheese
Half a cup parmesan cheese - finely powerdered
200gms goats cheese
1 tablespoon oregano and thyme
Zest of an orange
oven to 175 degrees celcius.
You need 4 square pieces of filo pastry 6cm x 6cm, for each tart.
Brush each piece of filo with butter and layer them twisting the
next one each time so it goes square piece diamond piece square
piece diamond piece.This gives a better effect in the finished
product. Take all the cheese and place into a bowl, break up and
mix well. Chop up the herbs finely and add them to the bowl. Add
the grated zest from one orange and then add the egg. Mix all
the ingredients together well.
Take a small muffin tin and grease lightly with a little butter,
I prefer to use silicon trays, its easier if you have them. Take
your buttered filo and place into the tin pressing down so you
get a flat bottom and the pastry just twists into the hole. Next
spoon in the mixture and leave a gap 1 inch from the top, lastly
sprinkle a little parmesan cheese on the top. It should be very
fine parmesan, not chunky grated. Bake in the oven for approximately
30 mins or until golden brown.
