Spicy Beef and Bean Lettuce Wraps

Ingredients:

2 romaine lettuce's
250gms minced beef
400gm tin of chilli beans
400gm can of tomato's
2 tablespoons tomato paste
Cajun seasoning
Extra virgin olive oil

Method:

In a non stick pan drizzle about a tablespoon of olive oil. Fry the mince beef until cooked well. Add half of the tin of chilli beans, one soup spoon of Cajun seasoning and half of the canned tomato's. Let this simmer on a low heat for about 15 mins. Lastly add a tablespoon of tomato paste to thicken the mixture. You can add as little or as much Cajun seasoning as you wish. Its all about personal preference. Some like it really spicy, some like it mild.
Next you need a large platter and the 2 romaine lettuces. I have said two lettuces purely because what you do is use only the little leaves from the centre. Peel off the large lettuce leaves and store them away for another day. Take each small leaf and scoop a small amount of the spicy beef mixture into the centre and place on the platter. You don't want to fill these until you are ready to serve them so the lettuce stays crisp and firm. The lettuce substitutes for a tortilla and gives a freshness with the spicy bite of the meat and bean mixture.
