Pumpkin Soup with Star Anis & Gingered Prawns

Ingredients: Serves approx 6

1 medium size pumpkin - skinned cut into cubes
2 onions - finely sliced
1 carrot - sliced
1 leek - sliced
2 stalks of celery - chopped
2 cloves garlic - chopped
6 spring onions - chopped
3 pcs Star Anis
1 litre - chicken stock
Glass white wine
Olive Oil to drizzle


Gingered Prawns:
Ingredients:

6 to 8 medium Prawns - shelled and de-veined and cut into small pieces
½ glass white wine
Ginger, garlic and coriander - chopped
Olive oil to sauté

Method:
Preheat oven to 160 degrees. Place the pumpkin, carrots, leeks, celery and a few slices of the onions in a casserole dish, drizzle with olive oil. Cook in oven until pumpkin turns slightly brown. Sauté the garlic, the remaining sliced onions and spring onions in olive oil in pan. Add the white wine, and then add cold chicken stock. Add pumpkin and vegetables from casserole and boil until the vegetables are cooked.

Blend and season to required taste.

Sauté prawns with ginger, garlic. Add wine and chopped coriander, Arrange prawn pieces in small ring in middle of soup bowl, and pour in soup.

Serve hot.
