Duck with baby corn and cauliflower in black sauce

Ingredients: serves 2 to 3

½ Duck roasted - buy already cooked from market - remove meat from bone and slice. No skin used.
2 tsp root ginger - finely chopped
2 tsp garlic - finely chopped
2 tbsp spring onions - chopped
2-baby corn - sliced
½ head of cauliflower - separate in small florets
1 green chilli - sliced finely
1 red chilli - sliced finely
2 tbsp oyster sauce
1 tsp sesame oil
1 tsp castor sugar
Salt and black pepper to season


Method:

Heat oil in wok. Add ginger and garlic, stir for about 30 seconds until light golden brown - if too golden it will turn bitter. Add the baby corn, cauliflower florets and duck. Stir fry for approx 1 minute. Add all remaining ingredients and stir-fry for a further 2 o 3 minutes. Serve hot.
