Stir-fried Bok Choy

Ingredients: serves 4

400g bok choy
2 tbsp oil
2 cloves of garlic - smashed
3 thin slices ginger - smashed
3 tbsp chicken stock
1 tsp sugar
light soy sauce to tatse
1tsp roasted sesame oil


Method:

Cut the bok choy into half lenthways. Wash and dry.
Heat a wok over high heat, add the oil and heat until very hot. Stir-fry the garlic and ginger for 30 seconds. Add the bok choy and stir-fry until it begins to wilt, then add the stock and sugar and season with soy sauce. Simmer for approx. 2 minutes or until leaves are tender but still green. Add the sesame oil and serve hot.
