Chicken Patties

Ingredients:

60ml Olive Oil
1/2 Red Onion, diced
4 tbsp Black Olives, diced
1/2 Red Bell Pepper, diced
2 cloves Garlic, diced
800gm Ground Chicken
1/2 tsp Hungarian Paprika
1/2 tsp Chili Powder
1 tsp Dried Oregano
1 tbsp Minced Fresh Parsley Leaves
1/2 tsp Ground Cumin
1/4 tsp Ground Sage
2 tbsp Bread Crumbs
1 Egg


Method:

1. In a medium sauté pan over medium heat add 30ml oil and all raw vegetables and sauté until translucent. Remove and cool.


2. Add veggies to raw chicken and mix thoroughly. Add all dry ingredients and egg. Thoroughly mix all ingredients and form into small patties. Cover and refrigerate for 30 minutes.


3. In same sauté pan add remaining 30ml olive oil and cook patties 2 to 3 minutes each per side.


4. Serve with ketchup and mustard on toasted bread with lettuce and tomato.
