Meatball Pasta Bake

Ingredients: Serves 8

600 gms minced beef
¼ cup fresh oregano
¼ cup fresh basil
3 cloves garlic
1 large red onion
Salt/pepper to season
1 Tablespoon Worstershire sauce
½ cup breadcrumbs
1 tablespoon tomato paste
2 eggs
Extra virgin olive oil
420 gm can tomatos
2 ½ cups tasty cheese
2 cups milk
2 tablespoons flour
50 gms butter



Preheat oven to 175 degrees C
Dice the onion and garlic into small pieces. Place the beef ina bowl, season with salt and pepper, add the fresh herbs, onion, garlic, Worstershire sauce, tomato paste and breadcrumbs. Next add the eggs and combine all the ingredients together. Take a dessert spoonful of mixture and roll it into a ball. You want them to be about 4 cm in diameter. Not tiny little meatballs. Place the meatballs on an oven tray and drizzle with olive oil. Bake for 20 mins. Now make the cheese sauce. Place the butter in a pot and melt. Add the flour and stir quickly. Pour in 1 cup of milk and stir into a smooth paste. Add 1 cup of cheese, keep stirring. You will need to keep adding milk as you go. You want a creamy smooth sauce. Not a lumpy one. Add the second cup of cheese and more milk. Place to the side for later. Once your meatballs are cooked place them in a Lasagne style dish. Next pour over your tomatos, and then the creamy cheese sauce. Make sure you get a generous covering all over the meatballs. Sprinkle with the remaining cheese and bake for 25 mins.

This is a hearty wholesome comfort food dish that children and adults will love. And it only takes about 30 mins from prep to oven.
