Oven Baked Tortillas



Ingredients: (20 slices)
10 to 12 medium size potatoes - boiled, peeled and cut in slices length ways
8 slices of Spanish or Italian ham
5 large eggs
2 garlic cloves - crushed
6 Spring onions - finely chopped
1 red pepper - cut into small pieces
1 yellow pepper - cut into small pieces
1 tbsp chopped fresh chives
2 tbsp flat leaf parsley - finely chopped
2 tbsp grated Parmesan cheese
1 cup of cream
Salt and ground black pepper to season

Method:
Preheat over to 180º C. Prepare silicon or a greased quiche dish and line with the slices of Spanish or Italian ham. Place the sliced potatoes on top. Beat the eggs, cream, Parmesan cheese crushed garlic and chives together in a large bowl. Season the mixture with salt and ground black pepper. Pour the mixture over the potatoes in the quiche dish and sprinkle the top with the red and yellow peppers and flat leaf parsley. Bake in the preheated oven for 30 - 40 minutes, or until top turns a golden brown, puffed and set in the centre. Remove from the oven and let it cool and set. Cut into thin slices and serve on a platter.
Serve with green salad for lunch or supper.
