Jo's Homestyle Chicken Noodle Soup



Ingredients: (serves 6 approx)
1 whole chicken, cut into pieces - approx12 pieces
1 large onion (peeled and sliced thinly)
2 large leeks (tops cut off), sliced
3 bay leaves
10 whole black peppercorns
1/2 bunch celery (cut in quarters and then diced small)
3 stalks lemon grass (bulb smashed to release flavour)
3 large carrots (peeled sliced into quarters the diced into 2cm chunks)
500gm packet dried egg noodles
1 bunch spinach (chopped roughly)
1 bunch bok choy (chopped roughly)
Celery leaves (to dress the soup)
1 litre Water
Salt/pepper to season

Method:
Place chicken, chopped onion, leeks, bay leaves, peppercorns, whole celery, whole carrots and lemon grass in the pot. Season and simmer, covered 1 hour.

Strain broth and reserve the chicken, and place the cooked vegetables to the side. When chicken is cool enough to handle, remove skin and pull the chicken apart into rough pieces.

Next add the chicken, vegetables and noodles back to the strained stock. Bring to a boil, then reduce heat, cover and simmer for a further 5 minutes. Lastly add the spinach and bok choy as they only take a couple of minutes to cook in the soup.

When serving isprinkle some chopped celery leaves over the top for colour.

Notes: This is a delicious healthy and hearty meal all in one giving you all the food groups you need for one day in one meal
